Sweet Hot Jalapeno Potato Salad

Tangy, savory, and bursting with bold flavor, this pasta salad brings the heat (just a little!) with Tony Packo’s Hungarian Banana Peppers, balanced by sweet sun-dried tomatoes and creamy feta in every bite.

3 cups cooked pasta (rotini or penne), cooled
½ cup Tony Packo’s Hungarian Banana Peppers, sliced
½ cup sun-dried tomatoes, chopped
¾ cup feta cheese, crumbled
½ cup cucumber, chopped (optional)
¼ cup red onion, thinly sliced (optional)

Dressing

⅓ cup olive oil
2 tbsp banana pepper juice (from the jar)
1 tbsp red wine vinegar
1 tsp dried oregano
Salt & pepper to taste

Add pasta, banana peppers, sun-dried tomatoes, feta, cucumber, and red onion to a large bowl.

Whisk together olive oil, pepper juice, vinegar, oregano, salt, and pepper.

Pour dressing over pasta and toss to combine.

Chill for at least 30 minutes, then serve.
