Pickle Macaroni Salad

Bright, crunchy, and seriously crave-worthy! This macaroni salad gets a tangy twist from Tony Packo’s Pickles that takes it from basic to “who brought this?!” status.

2 cups elbow macaroni
1 cup Tony Packo’s Pickles of choice, diced
½ cup red onion, finely chopped
½ cup celery, chopped
½ cup carrot, shredded
¾ cup mayonnaise
1 tbsp Tony Packo’s Pickle brine
1 tsp yellow mustard
½ tsp sugar
Salt & pepper to taste

Cook macaroni according to package directions. Drain and cool.
In a large bowl, combine macaroni, pickles, onion, and celery.
In a small bowl, mix mayo, pickle brine, mustard, sugar, salt, and pepper.
Pour dressing over macaroni and stir to combine.
Chill for at least 1 hour before serving.
