Pickle Three Bean Salad

This zesty bean salad is anything but boring! Crisp, tangy Tony Packo’s pickles and brine bring a bright, punchy flavor that wakes up every bite. Tossed with hearty beans and a simple, savory dressing, it’s the perfect make-ahead side that gets even better as it chills.

1 can (15 oz) kidney beans, drained & rinsed
1 can  (15 oz) wax beans, drained & rinsed
1 can  (15 oz) green beans, drained
1 cup Tony Packo’s Pickle of choice, diced
4 tbsp Tony Packo’s Pickle brine
½ cup red onion, chopped
4 tbsp olive oil
2 tsp Dijon mustard (optional)
1 tsp sugar (optional)
Salt & pepper to taste

Combine beans, pickles, and onion in a bowl.

Whisk olive oil, pickle brine, mustard, and sugar. Pour over salad and toss.

Chill 30–60 minutes, then serve.
